In the heart of Madrid, inside the elegant and reserved Club Matador, we had an inspiring conversation with David, the bar manager of the space. A lover of details and passionate about creating memorable moments, David reminded us of something we at Blowglass deeply believe: the glass matters as much as what it contains.

Although he started in the kitchen, his path led him to the bar, where he found what he was looking for: to create, serve and connect. Today, his cocktails combine technique, sensitivity and respect for the classic, while looking to the future.

"When the glass is well made, fine and thoughtful for that cocktail, the whole experience changes," he told us.

For David, glassware is a silent but powerful element. It influences aromas, flavors and how each drink is perceived. "It's an extension of the ambience," he says. And that shows in every glass that crosses his bar.

He also spoke to us about the rise of non-alcoholic cocktails and his passion for integrating ingredients such as sherry wine, which give depth and elegance to the Club's menu.

"A good cocktail is balance, and that's achieved from the liquid...to the glass that accompanies it."
